This recipe produces thick, bakery-style chocolate chip cookies with gooey centers and slightly crispy edges using simple techniques for a classic, buttery flavor.

  • 1 cup (2 sticks) unsalted butter, melted and slightly cooled
  • 1 cup packed light brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs, room temperature
  • 1 tablespoon vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 cups semi-sweet chocolate chips or chunks

Instructions

  1. Melt the butter and let it cool for about 10 minutes. In a large bowl, whisk the melted butter, brown sugar, and granulated sugar together until smooth.
  2. Beat in the eggs one at a time, then stir in the vanilla extract.
  3. In a separate medium bowl, whisk together the flour, baking soda, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined. Do not overmix.
  5. Fold in the chocolate chips.
  6. Cover the dough and chill in the refrigerator for at least 30 minutes, or up to 24 hours, for best texture.
  7. Preheat your oven to 375 degrees Fahrenheit (190 degrees Celsius). Line baking sheets with parchment paper.
  8. Scoop the dough into balls, about 2 tablespoons each, and place them 2 inches apart on the prepared sheets. For thicker cookies, press the dough balls slightly from the top down.
  9. Bake for 10 to 13 minutes, or until the edges are golden brown but the centers still look slightly soft.
  10. Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Notes

  • For extra gooey centers, press a few extra chocolate chips onto the tops of the dough balls immediately after removing them from the oven.
  • Using room temperature eggs helps the dough emulsify better, leading to a softer cookie structure.
  • If you skip chilling the dough, the cookies will spread more and result in thinner, crispier edges.
