2 medium zucchini

Instructions
Preheat your oven to 225 degrees Fahrenheit (107 degrees Celsius) or set your air fryer to 300 degrees Fahrenheit (150 degrees Celsius).
Wash and thinly slice the zucchini into rounds, about 1/8 inch thick. A mandoline slicer works best for uniform thickness.
Place the zucchini slices on a clean kitchen towel or paper towels. Cover them with another towel and press firmly to remove as much excess moisture as possible. This step is key for crunch.
In a bowl, toss the dried zucchini slices with olive oil, salt, pepper, garlic powder, and paprika until lightly coated.
Arrange the slices in a single layer on a baking sheet lined with parchment paper, ensuring they do not overlap. For air frying, place them in a single layer in the basket.
Bake for 1 to 1.5 hours, flipping the chips halfway through. If using an air fryer, cook for 15 to 20 minutes, shaking the basket halfway through.
Check the chips frequently after the first hour of baking. They are done when they are dry and crisp. If they are still soft, continue baking in 15-minute intervals.
Remove from the oven or air fryer and let them cool completely on a wire rack. They will crisp up more as they cool.
Notes
Removing moisture is the most important step to prevent sogginess. Press hard after slicing.
For extra flavor, try using onion powder or nutritional yeast instead of paprika.
Store cooled, completely dry chips in an airtight container at room temperature for up to 3 days.
