Make this easy, old-fashioned chocolate cobbler that creates its own gooey fudge sauce while baking, resulting in a cakey top and a molten bottom layer.

  • 1 cup granulated sugar
  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup cold water
  • 1/2 cup milk
  • 1/4 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1 cup granulated sugar (for topping)
  • 1/4 cup unsweetened cocoa powder (for topping)
  • 1 1/2 cups boiling water (for pouring over top)

Instructions

  1. Preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius). Lightly grease an 8×8 inch baking dish.
  2. In a large bowl, whisk together the flour, 1 cup sugar, 1/2 cup cocoa powder, baking soda, and salt.
  3. In a separate bowl, mix the cold water, milk, vegetable oil, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix. Pour this batter into the prepared baking dish.
  5. In a small bowl, mix the remaining 1 cup sugar and 1/4 cup cocoa powder for the topping. Sprinkle this dry mixture evenly over the batter in the dish.
  6. Carefully pour 1 1/2 cups of boiling water over the top of the sugar and cocoa mixture. Do not stir.
  7. Bake for 30 to 35 minutes, or until the top appears set and cake-like. A fudgy sauce will form at the bottom of the dish.
  8. Let the cobbler cool slightly before serving warm, preferably with vanilla ice cream.

Notes

  • The boiling water creates the self-saucing effect; pour it slowly and evenly over the top layer.
  • For a richer flavor, you can substitute the cold water with cold brewed coffee.
  • This dessert is best eaten the day it is made for the best sauce consistency.
