Make soft, chewy, restaurant-quality Naan Bread right on your stovetop. This recipe requires no special tandoor oven. You will achieve a wonderfully fluffy texture with beautiful charred spots. It is simple to make and perfect for dipping or serving alongside your favorite curries.

  • 1 ½ cups warm water (about 110F)
  • 1 tablespoon active dry yeast
  • 1 teaspoon sugar
  • 3 cups all-purpose flour, plus more for dusting
  • 1 teaspoon salt
  • 2 tablespoons plain yogurt or full-fat Greek yogurt
  • 2 tablespoons oil (like vegetable or canola)
  • 2 tablespoons melted butter or ghee, for brushing

Instructions

  1. In a large bowl, mix the warm water, yeast, and sugar. Let it sit for 5 to 10 minutes until foamy. This shows your yeast is active.
  2. Add the flour, salt, yogurt, and oil to the yeast mixture. Mix until a shaggy dough forms.
  3. Turn the dough out onto a lightly floured surface. Knead for 5 to 7 minutes until the dough is smooth and elastic.
  4. Lightly grease the bowl you used earlier. Place the dough inside, turning it to coat. Cover the bowl with plastic wrap or a damp towel.
  5. Let the dough rise in a warm spot for 1 to 1.5 hours, or until it has doubled in size.
  6. Gently punch down the risen dough. Divide it into 8 equal pieces. Roll each piece into a ball.
  7. Let the dough balls rest, covered, for 10 minutes.
  8. Working with one ball at a time, roll it out into an oval or teardrop shape, about 1/8-inch thick.
  9. Heat a cast-iron skillet or heavy-bottomed pan over medium-high heat until very hot. Do not add oil to the pan.
  10. Place one rolled naan onto the hot, dry skillet. Cook for about 1 to 2 minutes until bubbles form on the top surface.
  11. Flip the naan. Cook the second side for about 1 minute until it develops brown spots.
  12. For extra puffiness, carefully use tongs to hold the naan directly over an open gas flame (if you have one) for a few seconds until it puffs up completely. Alternatively, press lightly on the bubbles with a spatula on the skillet.
  13. Remove the cooked naan from the pan. Immediately brush the top generously with melted butter or ghee.
  14. Repeat with the remaining dough pieces. Serve your homemade Naan Bread warm.

Notes

  • For Garlic Naan, mix 2 cloves of minced garlic with 2 tablespoons of melted butter before brushing the cooked bread.
  • If you prefer a tangier flavor, use Greek yogurt instead of plain yogurt.
  • If you want a quicker dough, you can try a ‘No Yeast’ variation by adding 1 teaspoon of baking powder and 1 teaspoon of baking soda with the dry ingredients, skipping the rising time.
