Easy Homemade No-Bake Peanut Butter Cups

Make simple, rich peanut butter cups at home that taste like the classic candy. This no-bake recipe uses few ingredients and sets quickly.

  • 1 cup creamy peanut butter
  • 1/2 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 1 1/2 cups semi-sweet chocolate chips
  • 1 tablespoon coconut oil

Instructions

  1. Line a 12-cup mini muffin tin with paper liners.
  2. In a medium bowl, beat together the peanut butter, softened butter, powdered sugar, and vanilla extract until smooth and well combined. This is your filling.
  3. Press about 1 teaspoon of the peanut butter mixture firmly into the bottom of each paper liner, forming a flat base.
  4. Place the muffin tin in the freezer for 10 minutes to set the bases.
  5. In a microwave-safe bowl, combine the chocolate chips and coconut oil. Microwave in 30-second intervals, stirring well after each, until the chocolate is completely smooth.
  6. Spoon about 1 1/2 teaspoons of melted chocolate over the peanut butter base in each cup, spreading it gently to cover the filling completely.
  7. Return the muffin tin to the refrigerator and chill for at least 1 hour, or until the chocolate is firm.
  8. Peel off the paper liners before serving your homemade peanut butter cups.

Notes

  • For a richer flavor, use natural peanut butter that has been stirred well to incorporate the oil.
  • If you do not have a mini muffin tin, you can use a standard 12-cup muffin tin, but you will need to increase the filling and topping amounts slightly.
  • Store leftover peanut butter cups in an airtight container in the refrigerator for up to two weeks.
