Combine the chocolate cookie crumbs and melted butter in a medium bowl. Press the mixture firmly into the bottom and up the sides of a 9-inch pie plate. Place the crust in the freezer while you prepare the filling.
In a large bowl, beat the softened cream cheese until smooth. Gradually beat in the powdered sugar until fully combined.
Add the vanilla extract, peppermint extract, and green food coloring, if using. Mix until the color is uniform.
In a separate, clean bowl, whip the cold heavy cream until stiff peaks form.
Gently fold the whipped cream into the cream cheese mixture until just combined, being careful not to deflate the cream.
Fold in the miniature chocolate chips.
Spoon the mint filling evenly into the prepared crust.
Chill the pie in the refrigerator for at least 6 hours, or until firm. For a faster set, you can freeze it for 2-3 hours.
Slice and serve cold.
Notes
For a richer chocolate flavor in the crust, use Oreos with the cream filling removed.
If you prefer a firmer, frozen pie, freeze for 4 hours before serving.
You can top the pie with whipped cream or extra chocolate shavings before serving.
