Classic Moist Banana Bread with Brown Butter

This recipe yields a very moist banana bread loaf using the technique of browning the butter for added depth of flavor.

  • 1 cup (226g) unsalted butter
  • 1 3/4 cups (210g) all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 3 large eggs, room temperature
  • 3/4 cup (150g) granulated sugar
  • 1/4 cup (50g) packed light brown sugar
  • 1 teaspoon vanilla extract
  • 1 1/2 cups (about 4 medium) very ripe mashed bananas

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan.
  2. Place the butter in a light-colored saucepan over medium heat. Cook, swirling often, until the butter foams, then the milk solids turn golden brown and smell nutty. Immediately remove from heat and pour into a heatproof bowl. Let cool for 10 minutes.
  3. In a medium bowl, whisk together the flour, baking soda, salt, and cinnamon. Set aside.
  4. In a large bowl, whisk the eggs until blended. Whisk in the granulated sugar and brown sugar until combined. Whisk in the vanilla extract.
  5. Pour the slightly cooled brown butter into the sugar mixture and whisk until smooth.
  6. Gently fold the mashed bananas into the wet ingredients.
  7. Add the dry ingredients to the wet ingredients. Mix only until just combined; do not overmix.
  8. Pour the batter into the prepared loaf pan.
  9. Bake for 55 to 65 minutes, or until a wooden skewer inserted into the center comes out clean.
  10. Let the bread cool in the pan for 15 minutes before inverting it onto a wire rack to cool completely.

Notes

  • Use bananas that are heavily spotted or almost black for the best moisture and flavor.
  • If you prefer a less intense brown butter flavor, let the butter cool completely before mixing it with the sugars.
  • To check for doneness without overbaking, test the center; if it is slightly wet, bake for 5 more minutes and test again.
