Make the best homemade oatmeal cookies from scratch. This easy, one-bowl recipe yields cookies that are perfectly soft and chewy in the center with slightly crisp edges. You can easily customize them with chocolate chips or raisins.

Ingredients

Scale
  • 1 cup (2 sticks) unsalted butter, softened
  • 1 cup packed light brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3 cups old-fashioned rolled oats
  • 1 cup mix-ins (optional: chocolate chips or raisins)

Instructions

  1. Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until the mixture is light and fluffy. This is your first step to achieving the best chewy oatmeal cookies.
  3. Beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  4. In a separate bowl, whisk together the flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined. Do not overmix.
  6. Stir in the rolled oats by hand. If you are adding chocolate chips or raisins for oatmeal chocolate chip cookies recipe variations, mix them in now.
  7. Drop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart. For thicker cookies, press the dough balls down slightly.
  8. Bake for 10 to 12 minutes, or until the edges are set and lightly golden. For soft baked oatmeal cookies, err on the side of underbaking slightly.
  9. Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Notes

  • For an extra chewy texture, use quick oats instead of old-fashioned oats, or blend about 1/2 cup of the oats into a coarse flour before mixing them in.
  • If you prefer a slightly crispier edge, bake for an additional 1-2 minutes.
  • This recipe works well for breakfast cookies with oats; simply omit the chocolate chips if you prefer a simpler flavor profile.
  • If you want to make this a low sugar oatmeal cookies recipe, you can substitute some of the sugar with a sugar substitute appropriate for baking, though texture may change slightly.
