  • 1 teaspoon baking powder

  • 6 tablespoons cold unsalted butter, cut into small pieces
  • 3/4 cup cold buttermilk
  • 2 tablespoons unsalted butter, melted (for brushing)
  • 1 tablespoon turbinado sugar (for sprinkling)

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Lightly grease an 8×8 inch baking dish.
  2. In a large bowl, combine the sliced apples, granulated sugar, brown sugar, flour, cinnamon, nutmeg, allspice, and lemon juice. Toss gently until the apples are evenly coated. Pour the apple mixture into the prepared baking dish.
  3. Melt the 1/4 cup of butter in a small skillet over medium heat. Cook, swirling occasionally, until the butter foams, then brown bits form at the bottom and it smells nutty. This takes about 3 to 5 minutes. Immediately pour the hot brown butter over the apple mixture in the baking dish.
  4. Prepare the topping: In a medium bowl, whisk together the 1 1/2 cups flour, 1 tablespoon sugar, baking powder, and salt.
  5. Cut in the 6 tablespoons of cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
  6. Pour in the cold buttermilk and stir just until a shaggy dough forms. Do not overmix.
  7. Drop spoonfuls of the dough evenly over the apple filling. Do not cover the entire surface; leave gaps for steam to escape.
  8. Brush the tops of the dough mounds lightly with the 2 tablespoons of melted butter and sprinkle with turbinado sugar.
  9. Bake for 40 to 45 minutes, or until the topping is golden brown and the apple filling is bubbling thickly around the edges.
  10. Let the cobbler cool on a wire rack for at least 20 minutes before serving warm.
