Cast Iron Seared Tuna Steaks

Cook perfect, restaurant-style tuna steaks using a hot cast iron skillet for a good sear.

Ingredients

  • 2 tuna steaks (about 6 oz each, 1 inch thick)
  • 1 tablespoon olive oil
  • 1 teaspoon coarse salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder

Instructions

  1. Pat the tuna steaks completely dry with paper towels.
  2. Mix salt, pepper, and garlic powder together in a small bowl. Rub this mixture evenly over all sides of the tuna steaks.
  3. Place the cast iron skillet over high heat and let it preheat for 5 minutes until it is very hot.
  4. Add the olive oil to the hot skillet. It should shimmer immediately.
  5. Carefully place the seasoned tuna steaks in the hot skillet.
  6. Sear for 1.5 to 2 minutes per side for rare (cool, red center). Adjust time slightly for your desired doneness.
  7. Remove the tuna steaks from the skillet and place them on a cutting board.
  8. Let the tuna rest for 5 minutes before slicing against the grain.

Notes

  • For a simple pan sauce, remove the skillet from heat after searing, add 2 tablespoons of butter and 1 tablespoon of lemon juice, and scrape up any browned bits from the bottom of the pan.
  • Serve these tuna steaks with steamed asparagus or a simple rice pilaf.
